- Anise Biscotti Recipe
Preheat an oven to 350°F. Lightly grease and flour a large baking sheet or line with parchment paper. Have another ungreased baking sheet on hand.
In the bowl of an electric mixer, beat the butter on high speed until fluffy and pale yellow. Add the granulated sugar and continue beating until the mixture is no longer gritty when rubbed between your finger and thumb. Reduce the speed to low and add the eggs one at a time, beating well after each addition. Add the vanilla, anise extract and aniseed and beat until blended.
Over a sheet of waxed paper, sift together the flour, baking powder and salt. Gradually add the flour mixture to the butter mixture and beat on low speed or stir with a wooden spoon just until blended. The batter should be very soft.
Turn the batter out onto a generously floured work surface and divide in half. With well-floured hands, transfer one half onto the greased baking sheet and shape into a log about 12 inches long and 1 1⁄2 inches in diameter. Place on one side of the sheet. Repeat with the remaining batter, leaving at least 4 inches between the logs. (They will spread as they bake.) Lightly brush the top of each log with some of the egg white and sprinkle with the coarse sugar crystals.
Bake the logs until the edges are golden, 25 to 30 minutes. Transfer the pan to a wire rack and let cool for 10 minutes. Using a serrated knife, cut the logs, still on the pan, on the diagonal into slices 1⁄2 inch wide. Carefully turn the slices on their sides and place as many as will fit on the second (ungreased) pan. Keep the remaining slices on the first pan. Return the biscotti to the oven and bake until the edges are golden, about 10 minutes. Transfer the pans to wire racks and let the cookies cool completely. Rated 5 out of 5 by Ozziepuppy from Love this Mixer! I have the KitchenAid hand mixer but I needed something stronger because I have recently started making artisan gluten-free bread. The hand mixer could not handle the large amount of gluten-free bread dough for a multi-loaf recipe. When I went to the Williams Sonoma store I did not intend to get this model, but I am very glad I did. It handles the bread dough extremely well. This model has a DC motor, which has more torque than the models with AC motors. I have the screw adjustment set so that the beater is all the way down (as far as possible) and it seems to be only about 1/8" from the bottom of the bowl, so I haven't noticed a problem with the beater not being far enough down like some other people have. I also bought the scraper beater (it MUST be F-series to work!) which unfortunately seems no longer to be available (maybe they are updating it?), and it also works very well (scrapes the sides of the bowl as it turns). I do occasionally stop the mixer and scrape the sides of the bowl, but I probably do not need to do that (I just like to). The clear glass bowl is quite heavy, but this also is not a problem for me as I would prefer to have a glass bowl rather than a metal one, so I am willing to put up with it being heavy (it is also nice to see what is going on within the bowl as it mixes). So far I have used this mixer to make several batches of artisan bread, scrambled eggs/quiche, and scones, and it has performed beautifully. Before I purchased it I was concerned that the size was too large and that this huge mixer would overwhelm my kitchen, but it just fits under my cabinets in the corner and is actually quite unobtrusive. I leave the mixer out on my counter (under the cabinets) rather than putting it away because it is so large and heavy. The mixer sits on two terrycloth hotpads, which makes it easy to slide the mixer out from under the cabinets and then slide it back under them. I have absolutely no regrets about buying this mixer. It is so well-made, and so heavy-duty, that I think it will be able to handle any task I give it. For those whose reviews mentioned that it "doesn't handle small jobs well," I found that it scrambled 3 eggs just fine; however, when I want to blend tiny amounts of things I just pull out my immersible blender (I don't think one kitchen appliance needs to handle every possible task). I hope this review helps those of you who are on the fence about this mixer. By the way, this mixer was the top-rated one by CR. One more thing: the Williams-Sonoma exclusive color is really beautiful, too. Why not use the glass bowl then? Because the beaters for the large bowl do not come near touching the bottom of the bowl. No matter what you are mixing there is repeated hand scraping of the bowl. And, the glass bowl is so heavy it is awkward to scrape the bowl and pour the contents into the baking pan. There is no guard for the glass bowl so contents fly all over except on the lowest speeds. I put 3 egg whites in the mixer and adjusted the screw at the back to lower the whisk as low as it would go. It wouldn't even touch the egg whites enough to get more than a few bubbles. When I bought the mixer I explained that this was a concern, the manager said that the whisk was the incorrect one for the mixer and went back to the storeroom and brought out a different whisk and it would have worked. I got the box home and the whisk wasn't the one she showed me that would have worked. Not sure whether I should give a bad review for the whole mixer for just that matter. I tried three egg whites for meringue. The beater did not reach the bottom and did not whip at all. The motor is not as powerful as my existing mixer, so even after doubling the volume, it still took much longer to whip the egg whites. This may be perfect for large batch cooking, but for one batch of cookies, it was a loss of functionality. I didn't need this beautiful new mixer--my 14-year-old Epicurean Empire Red KitchenAid mixer with a 6 quart stainless steel bowl still works great. It was the glass bowl and glittery, red finish that drew me in, and then I began to think about gifting my Empire Red mixer to my daughter. She agreed, as a double batch of cookies is difficult with a hand mixer. I did my homework, and the Professional 6500 gets the highest marks from Consumer Digest. Just used the new mixer to make banana bread--it was fun to be able to see the ingredients being mixed together in the glass bowl! I bought the 610 model from WS a few years back and, although it served me relatively well over those years, it had a few downfalls and eventually didn't want to switch on. My husband decided I should upgrade, and wow what a difference. The 6500 is incredibly quiet in comparison, the design is absolutely beautiful, and it's a true work horse. The glass bowl is not only beautiful, but very functional! I love being able to see if there are un-mixed bits at the bottom of my bowl.
