If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Coconut Cupcakes with Cream Cheese Frosting

To make the cupcakes, preheat an oven to 350°F. Line 12 muffin cups with paper liners. In a bowl, sift together the flour, baking powder and salt. In another bowl, using a handheld mixer on medium-high speed, beat together the sugar and butter until the mixture is light in texture, 2 to 3 minutes. Beat in the egg yolks, one at a time, then beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 additions alternately with the coconut milk in 2 additions, beginning and ending with the flour mixture and scraping down the bowl as needed, beating just until smooth.

In another bowl, using the mixer on high speed, beat the egg whites until soft peaks form. Stir one-fourth of the whites into the batter to lighten it, then fold in the remaining whites, leaving some whites visible. Gently fold in the coconut flakes. Divide the batter evenly among the lined muffin cups, filling them about three-fourths full. Bake until a toothpick inserted in the center of a cupcake comes out clean, about 20 minutes. Let cool for 5 minutes in the pan, then turn out of the pan onto a wire rack and let cool completely. Leave the oven on.

To make the frosting, spread the coconut flakes on a rimmed baking sheet. Bake, stirring occasionally, until lightly toasted, about 10 minutes. Let cool completely. In a bowl, using the mixer on low speed, beat together the cream cheese, butter, lemon juice and vanilla. Gradually beat in the confectioners’ sugar until the icing is smooth. Spread the frosting on the cooled cupcakes, dividing it equally. Sprinkle with the toasted coconut, then serve. Makes 12 cupcakes.

Variation: For coconut layer cake, divide the batter between 2 buttered and floured 8-inch round cake pans. Bake until the cakes begin to pull away from the sides of the pans, about 25 minutes. Make a double batch of the frosting and assemble and frost the cake. Garnish with 1 cup toasted dried coconut flakes.

    Rated 4 out of 5 by from So loud can't give 5 stars I have had my KitchenAid Professional 600 for 8+ years -- it is absolutely wonderful and I can bake anything because of the prep that this fantastic mixer can perform -- The only exception and it is a big one, is that it is soooo loud it compares to an airplane engine in my kitchen. Way to loud. I am sending it out for "repair". I hope it comes back much quieter. My goodness!

Lasted about 1 year and I finally gave up on it. Threw it in the garbage. What happened to the quality! KitchenAid mixers only have a name, but not for long if they don't improve. Wasted my good money on a bad product.

It is a work horse of a mixer and I've used it countless times. I've never had a problem with this machine. I would recommend this mixer to anyone.

    Rated 5 out of 5 by from Best of the Best! I have had this mixer for over ten years. I keep in on the granite counter top and slide back and forth. When I am finished using it, I slide it back in the corner and put a cover on it. I have all of the attachments and it truly is the workhorse of my kitchen. I use it to grate cheese, make pasta, grind meat, juice citrus, make home made ice cream. I love the way the attachments can be added so quickly and are all dishwasher safe. I also like the large bowl. My friends have the smaller versions, but mine is the perfect size. I cannot imagine my kitchen without it. I even sometimes double cookie recipes and bread recipes and have never had a problem!

    Rated 1 out of 5 by from Heartbroken over this mixer!!! Just pulled out this mixer to make cookie dough for Christmas baking and it just bit the dust!! Another recent review compelled me to write this warning. I believe that the gears must be stripped. The motor has always made a loud rattling noise. I purchased this machine about 5 years ago with great promise, thinking it would help me develop a love for baking among other things that this machine is capable of doing. However, because it was SO LOUD…and also heavy, I have barely used the mixer. I have opted to just use a hand mixer instead. I have probably used this mixer less than 20 times.I believe that this machine was never right from the time of purchase. I had nothing to compare the noise to, but I now know that my friends kitchenaid mixer is much quieter and motor runs much smoother. Although I have read wonderful reviews on WS return policy, I fear contacting them because so much time has passed since the original purchase. Very very sad about this very limited use appliance!! :(
