Receiving instructions
- The beef Wellingtons are shipped frozen with dry ice. Please take care not to touch the dry ice with bare hands. Freeze the beef Wellingtons upon receipt. Keep frozen, up to 3 months, until ready to bake.
Preparation
- Position a rack in the upper third of an oven and preheat to 375ºF. Place the frozen beef Wellingtons on a parchment-lined baking sheet. Whisk together 1 egg and 1 tsp. water. Brush the top and sides of the pastry with the egg mixture. Bake until the pastry is golden brown and an instant-read thermometer inserted into the center registers 130º to 135ºF for medium-rare, 35 to 45 minutes. Let rest for 10 minutes before serving.
