- Apple Ginger Cranberry Pie with Ice Cream
Remove 1 dough round from the refrigerator. Transfer to a 9-inch deep-dish pie dish and gently press into the dish. Trim the edges flush with the rim. Reroll the dough scraps and cut out shapes using decorative pie cutters. Refrigerate the pie shell and cutouts for 30 minutes.
Position a rack in the lower third of an oven and preheat to 400°F.
In a large bowl, toss together the apples, cranberries, crystallized ginger, the 3/4 cup sugar, the salt, the 3 Tbs. flour and the lemon juice.
Let the pie shell, cutouts and the remaining dough round stand at room temperature for 5 minutes. Pour the apple filling into the pie shell and place the dough round over the filling. Trim the edges flush with the rim and press the top and bottom crusts together. Brush the underside of the cutouts with egg wash and arrange them on the pie. Brush the entire top crust with egg wash and sprinkle with sugar.
Bake until the crust is golden and the filling is bubbling, about 1 hour, covering the edges with foil if they begin to brown too quickly. Transfer the pie to a wire rack and let cool for 1 hour before serving.
To serve, cut the pie into slices and top with vanilla ice cream. Serves 8.

The brew time is long enough to get great flavor and short enough to leave the bitter compounds in the grounds. It's east to use and clean, I just toss out the grounds, flip the filter inside out and and rinse in boiling water. Plus it looks great with it's wood and leather handle. An elegant, streamlined design which produces a wonderfully clean, full-bodied brew. The reusable flannel cloth filter does a good job of allowing more oils to pass through while keeping out fine grind particles, but has to be cleaned immediately after use and should always be stored wet (I keep mine in a small container of water in the fridge). I find that flipping the filter inside out (while it's still on its metal ring) and lightly scrapping the dirty side of the filter with a spoon as hot water is running through it is the best way to get rid of tiny coffee particles that could build up, slowing down extraction time and making a bitter brew. The Woodneck does require a little practice (and a thin spout water kettle) but it is much more forgiving than the Hario V60 or Chemex. The woodneck makes a full-bodied, complex cup of coffee like a French press, but without a muddy mouth feel. Brewing is straight forward and doesn't require timing, tamping or precsion measurement. This little pot makes great coffee - probably the best drip coffee you will have anywhere (better than Technivorm). You'll want the Hario Kettle and extra flannel filters.
