Hancock Gourmet relies upon a treasured Hancock family recipe, crafting small batches of cakes full of tender, luscious lobster meat with a minimum amount of filler. A splash of cream and a dash of spices round out the flavor, and panko breadcrumbs ensure a beautiful, golden crust and a crisp, contrasting texture.

    • 8 cakes; 16 oz. total (serves 4 as an appetizer; 2–3 as an entrée).

  • Receiving instructions

    • Hancock Gourmet Lobster Cakes are shipped frozen with ice packs. Upon receipt, store the lobster cakes in the freezer, where they will keep for up to 3 months unopened. Keep frozen until ready to use

    Preparation

    • Thaw the lobster cakes in the refrigerator overnight.
    • In a large, heavy sauté pan over medium heat, warm 2 tbs. vegetable oil. Add 1 tbs. unsalted butter and heat until the foaming subsides.
    • Add the lobster cakes to the pan and cook, turning once, until well browned on both sides, 4 to 5 minutes per side. Serve immediately.

Dedicated to supporting their Maine community, Hancock Gourmet makes their lobster cakes using fresh lobster wild-caught by local "lobstermen," as well as cream and butter from a local dairy. The cakes are hand prepared in small batches without fillers or binders, so the true flavor and texture of Maine lobster shines through in every bite.

About Hancock Gourmet

Hazel Ellis Hancock opened a lobster restaurant in Ogunquit, Maine, in 1946, which she ran alongside her sisters Fannie and Mina. The three handed their recipes down to their heirs, including granddaughter Cal Hancock. The restaurant has stayed in the family, and Cal launched Hancock Gourmet in 2000. She uses her Nana’s prized recipes and only the freshest shellfish to deliver a taste of Maine to seafood lovers nationwide. 

Serving Suggestions

  • Sauté in butter and serve one or two cakes per person with lemon slices as an easy, delicious appetizer.
  • Experiment with sauces; although these cakes are satisfying simply spritzed with lemon, they’re also delicious with a beurre blanc sauce or even an Asian dipping sauce.
  • Put the cakes into toasted, buttered rolls for tasty lobster cake sliders.
