Bake until bubbly, portion into squares or rectangles of your desired size and serve with a dollop of sour cream and a dash of your favorite hot sauce. Beef Enchiladas Roja Casserole: Rich, braised beef, mixed with chilies, a blend of cheeses, crème fraîche sauce and a hint of cilantro.
Chicken Enchiladas Verde Casserole: Tender chicken breasts, smothered in a bright salsa verde with cilantro and cumin, sprinkled with a layer of cheddar and Monterey Jack cheeses.
