Founded in 1979, Elephants Delicatessen, in Portland, Oregon pioneered the gourmet food market with its made-from-scratch entrees, prepared with all-natural, local ingredients. Perfect for a quick weeknight meal or as a party treat, these casseroles are a snap to prepare. Bake until bubbly, then serve with a dollop of sour cream, a lime wedge and a dash of your favorite hot sauce. This sampler combines two of the deli's tried-and-true customer favorites:

Beef Enchiladas Roja Casserole: Rich, braised beef, mixed with chilies, a blend of cheeses, crème fraîche sauce and a hint of cilantro.

Chicken Enchiladas Verde Casserole: Tender chicken breasts, smothered in a bright salsa verde with cilantro and cumin, sprinkled with a layer of cheddar and Monterey Jack cheeses.

  • Set of 2 trays: Contains one tray each of Beef Enchiladas Roja and Chicken Enchiladas Verde. 4 lb. total; 2 lb. each (serves 6–8).
  • Set of 4 trays: Contains two trays each of Beef Enchiladas Roja and Chicken Enchiladas Verde. 8 lb. total; 2 lb. each (serves 12–16).

Use & Care

Receiving Instructions:

  • The casseroles are shipped frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt, store the enchilada casseroles in the freezer, where they will keep up to 60 days, or place in the refrigerator for use within 4 days.

Preparation

  • For best results, thaw unopened container in the refrigerator for 24 hours before heating.
  • Conventional Oven: Preheat oven to 375°F. Place thawed tray of enchiladas on a baking sheet. Remove lid from tray and bake, uncovered, for 40 minutes.
  • Microwave Oven: Remove lid from defrosted tray. Place in microwave and cook on high power for 5 minutes. Rotate 90 degrees then resume cooking for an additional 3–5 minutes. Note: If using a carousel microwave, no need to rotate the tray. Simply microwave on high for 8–10 minutes.

To Serve

  • Once heated, allow the enchiladas to rest for 7–10 minutes prior to service. Per your preference, garnish with freshly chopped cilantro, serve with sour cream, escabeche, sliced radish and a bottle of your favorite hot sauce!

Beef Enchilada Roja

  • Enchilada roja sauce: Canola/olive oil blend, yellow onion, garlic, vine-ripened tomatoes, crushed red chile flake, cumin, black pepper, kosher salt, chile powder, ground pasilla chilies, paprika.
  • Corn tortillas: White corn cooked with lime, water, sodium propionate, guar gum, cellulose gum, benzoic acid, sorbic acid, phosphoric acid, fumaric acid, potassium sorbate, calcium propionate and propionic acid, enzymes to preserve freshness).
  • Beef enchilada filling: Piemontese beef, ground beef 80% lean, garlic, extra virgin olive oil, kosher salt, black pepper, beef enchilada braising liquid (water, beef base (roasted beef and beef juices, salt, beef stock, sugar, beef flavor [autolyzed yeast extract, maltodextrin, flavoring (contains canola oil), beef stock, lactic acid, calcium lactose, gum arabic, grill (contains soybean and cottonseed oil)], onion powder, maltodextrin, caramel color, flavor (autolyzed yeast extract, corn syrup solids, salt, citric acid), beef powder, beef extract, garlic powder, disodium inosinate, disodium guanylate, natural flavorings), spices.
  • Crème fraîche sauce: Heavy cream (40%), sour cream), Monterey Jack cheese, cheddar cheese, cilantro.

Chicken Enchiladas Verde:

  • Enchilada verde sauce: Yellow onion, garlic, tomatillos, pasilla chilies, cilantro, serrano chilies, cumin, heavy cream (40%), kosher salt, water, chicken base (roasted chicken and chicken broth, salt, hydrolyzed corn protein, sugar, chicken fat, yeast extract, onion powder, modified food starch, hydrolyzed soy protein, disodium inosinate, disodium guanylate, turmeric [color], natural flavor, garlic powder).
