Receiving Instructions
The steaks are shipped frozen with cold packs to maintain the appropriate temperature during shipment, and they may arrive partially thawed. This is to be expected and does not impact the safety of the product. Upon receipt, refrigerate or freeze to enjoy at a later date. The steaks keep refrigerated, up to 5 days, unopened, or up to 3 months frozen. If frozen, remove the steaks from the freezer and thaw in the refrigerator overnight. We recommend placing the steaks on a tray during thawing to catch any juices. For best quality, we do not recommend refreezing the steaks after they have been thawed.

Serving Suggestions
- Season with pepper and kosher or coarse sea salt, brush with olive oil and grill to desired doneness.
- Season with salt and pepper, cook over high heat until medium rare, and serve with a classic béarnaise sauce of egg yolks, wine, vinegar, shallots, lemon juice and tarragon.
