True to its name, the lean tenderloin is the tenderest cut of beef. Grilled or roasted whole, cut into filets, wrapped in pastry for a Wellington or sliced thin for a stroganoff, it always yields delicious results. Double R Ranch Co., a family-owned ranch in Washington, supplies our whole tenderloin, selecting the choicest of their grass-fed, grain-finished beef for our Butcher Shop.

- The tenderloin is shipped frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt, refrigerate or freeze to enjoy at a later date. The tenderloin keeps refrigerated, up to 5 days, unopened, or up to 3 months frozen. If frozen, remove the tenderloin from the freezer and thaw in the refrigerator overnight. We recommend placing the tenderloin on a tray during thawing to catch any juices. For best quality, we do not recommend refreezing the tenderloin after it has been thawed.

After thawing the tenderloin, I was able to make two large Beef Wellingtons, and still have enough left over for a couple of steaks as well. . I used some of the trimmings to make some beef stock as well. I prefer a full-sized tenderloin like this, so that I can prepare it in whatever way I like. The meat itself was tender and flavorful. It's a surprisingly generous amount--more than enough to feed a crowd. And it's probably the most tender and flavorful filet I've ever eaten. Just remembering it makes my mouth water.
