Rated 3 out of 5 by JQuest from Good product - poor instructions First 2 times I used it without a hitch. 3rd time was GRRR. The unit started fine. I moved the unit slightly (not up to pressure yet) and accidentally hit the cancel button. I restarted the unit, it went to warm almost immediately. I tried several tactics to get it to work and called Cuisinart. The grumpy person read from her book and finally said that after cancelling, you can reset the unit by holding start button for 15 seconds. It took several tries but I was able to get the unit to start. Not really sure why unit was being so troublesome, but It delayed dinner by an hour. I think issue was related to the safety shut-off. My thought is the poor reviews may be linked to similar events and that C. should figure how to better program the unit as their menu system doesn't tell the user enough. A trouble code or light system to say why it will not come to pressure would prevent so many poor reviews and returns. Very little tending needed and that's what I was after. Performance is consistent, results are just what I wanted. I use this primarily for cooking dried beans, which we eat a lot of. I have found that any published cooking time chart - including the one in the enclosed booklet - are to be read with a "grain of salt." Beware that if you have never worked with a pressure cooker before, you will be doing some experimenting at first to get your times down. I have kept meticulous notes on each recipe and type of bean I cook, and I would advice anyone to do the same. If you plan to make a roast in it and then plan to use it for something like potatoes, you may need to shut it off and wait a few mins before re-starting a cycle or the unit may get confused and shut off on you. I love that I can sear a roast, add about 3/4 to a cup of liquid, and in 45-50 mins get a perfect-every-time tender roast beef (2-2.5 lbs). This is NOT crock-pot style cooking, as different foods need different cook times. and throwing in veggies at the last few mins of a cook cycle doesnt really work. the floating valve once the liquid inside boils, can sometimes get stuck as it needs to float to the top to seal off the cooker so pressure will build. Sometimes just tapping this area of the top will get it to click into place. That's the only quirky thing about using this cooker. It had been years since I used a pressure cooker, but after listening to my daughter (who happens to be a very accomplished private chef), I decided to see if I would appreciate its efficiency as much as she did. I admit that the pressure cooker delivered. And with considerable improvement over my ancient model from yesteryear. I cooked delicious green beans in several minutes, and dried beans only took 35. I believe the taste of both dishes was improved over the stovetop method. I've found the Cuisinart easy to use, and its safety features are superb. Received as a gift, have used for soups, bean, chicken, asparagus, potato-leek etc. Am learning to adapt many old slow cooking recipes. This is amazingly fast, browning and saute settings really work, great stew, lamb shanks, chicken and dumplings. Now trying tapioca. Do err on the side of less time as the book suggests to avoid mush.
