This trio of traditional French-style pâtés is hand made from a family recipe using wholesome ingredients. All meats are produced without antibiotics or hormones, and each recipe is free of preservatives, artificial ingredients and nitrites.
Pâté with Black Pepper: A classic, dense blend of pork, pork liver, red wine and black pepper, topped with a layer of black-pepper aspic.
Rillettes de Porc: Features shredded pork meat and savory pork fat cooked into a substantial confit and finished with a layer of pork fat, in the traditional style.
Truffle Mousse: Chicken livers, black truffles, porcini mushrooms and sherry, cooked into a creamy mousse and finished with a layer of black-truffle aspic.

Fabrique Délices may be based in California, but it is a completely traditional French charcuterie company, dedicated to bringing time-honored classics like saucisson sec, country pate, duck rillettes, saucisse de Toulouse and boudin noir to American homes for more than 25 years. While the business continues to grow under the direction of chef Antonio Pinheiro and Marc Poinsignon, it remains committed to slow, artisanal methods of production.
