- Chuck Williams Madeleines Recipe
Position a rack in the lower third of the oven and preheat to 400°F (200°C). Generously butter a 12-mold madeleine pan.
In a bowl, sift together the flour and baking powder. In another bowl, using an electric mixer on medium speed, beat together the egg, granulated sugar and orange flower water for 30 seconds. Increase the speed to high and beat until the mixture has quadrupled in bulk and is very thick, about 10 minutes. Using a rubber spatula, carefully fold the flour mixture and then the softened butter into the egg mixture. Spoon the batter into the prepared molds, filling each one about three-fourths full.
Bake until the madeleines are lightly browned around the edges and on the bottom, 10 to 12 minutes. Remove the madeleines from the oven and immediately turn them out onto a wire rack. Using a fine-mesh sieve or a sifter, dust them with confectioners’ sugar. Serve warm. Makes 12 madeleines.
Note: Madeleine pans typically have 8 or 12 shallow molds and come in tinned steel, metal with a nonstick finish, or pliable silicone. If you use a black nonstick madeleine pan, reduce the oven temperature to 375°F (190°C) or shorten the baking time by a few minutes.

The scraper beater is brilliant and a great time saver. I can't compare it to KitchenAid, as this is my first and only mixer, but it's served all of my needs perfectly. It's light enough that it doesn't need to live on my countertop, which is great for small kitchens. Clean up is a breeze, since the bowl is dishwasher friendly. I'll admit it, I've been spoiled by a hand me down Kitchenaid Professional. It's the only mixer I had ever used, but it died 2 days before thanksgiving. Since I love all my other Breville electrics, I decided I would get this mixer instead of another kitchenaid. While it is lighter, it is too small for a doubled batch of cookie dough and the cheap, plastic scraper blade moves the dough up the the mouth of the bowl where it then rolls up and out. I dislike needing 2 hands to tilt the head up. My disappointment is my fault. My husband and I were in a WS just before Christmas 2012. I've always wanted a stand mixer and bought one. But a busy job ect., and it was 12/24/13 before I opened the box for the very first time. There were no instructions, no owners manual. I found the owners manual online and my husband printed it for me. But I also found that there was no wire whip in the box. (so now I need to buy one) By the look of the internal packaging, I'm certain this was a returned product. But no one in WS bothered to check it out before reselling it. One year later, I'm sure WS would not care to hear my complaint and do anything about it. As I said, I should have not waited to open the box. We have had excellent experience with Breville thus far with the smart oven and water boiler and thus were not dissuaded by its new entry into the stand mixer market. It was a lot cheaper than a pro kitchenaid, also made of metal parts, and came with the much needed scraper attachment. Also, it has high power relative to the price. I have nice knives so I didn't need the slicer, the original imperial pasta machine is better, and a blender can grind grains. Besides the ice cream maker (which almost won the debate), I couldn't think of a good reason besides brand recognition. And I have no regrets.
