- Pressed Breakfast Burritos
Put the jalapeño, garlic, lime juice and the 1/2 tsp. salt in a molcajete or small bowl. Smash with a pestle or a fork to a coarse paste. Add the avocados and cilantro and mix and mash, leaving some lumps. Adjust the seasoning with salt. Set the guacamole aside.
In a large nonstick fry pan over medium heat, warm 2 Tbs. of the olive oil. Add the red and green bell peppers and cook, stirring occasionally, 8 to 10 minutes. Add the potatoes and cook until warmed through, 3 to 5 minutes more. Season with salt and pepper. Keep warm.
Preheat an electric panini press on the “panini” setting. Place the bacon on the press and close the lid. Cook until crispy, 3 to 4 minutes. Drain on paper towels. Wipe off the press.
In a bowl, beat together the eggs, salt and pepper. In a nonstick fry pan over medium-high heat, warm the remaining 1 Tbs. olive oil. Add the eggs and cook, stirring occasionally, until curds form, 2 to 3 minutes. Place a large spoonful of the scrambled eggs in the center of each tortilla. Top each with some of the bell pepper mixture, 1 crumbled bacon slice and 1 oz. cheese. Roll into a burrito and lightly brush the outside with olive oil.
Place 2 burritos on the panini press and close the lid. Cook until crispy, 2 to 3 minutes. Repeat to cook the remaining burritos. Serve immediately with guacamole, sour cream and salsa. Serves 6.

However, the pressure cooker takes entirely too long to reach full pressure. I have been using the Cuisinart Electric Pressure cooker for years and it comes to full high pressure in half the time. I called Breville support and was told it could take up to 45 minutes to come to high pressure. If it takes that long to come to pressure -,it defeats the idea of cooking quickly in a pressure cooker. Very excited about programmable release on this model. Sadly, never saw it in action as the first time I used it, it died after reaching pressure. Completely dead. Although it says the nonstick inner cooking pot is dishwasher safe, I've found myself with a grey substance all over my hands every time I've taken it out of the dishwasher. It comes from the painted exterior of the nonstick vessel. There's been no damage whatsoever to the nonstick interior, but I don't believe it should be advertised as safe to put in the dishwasher. You need to read the use manual to ensure you know how to operate it, especially the fast/pressure cooking. It is not difficult but the first few times, you need to be able to see exactly what you are doing. The food comes out in 40 minutes like you have cooked all day. I used to make a pot roast in the oven but never again. The meat was fork tender and the juices made a delectable gravy when thickened. I love the Fast Slow Pro. I use it constantly. I've used all the features, and have even made dishes that started out with the pressure cooking feature and ended with the slow cooker. The job the pressure cooker does on greens and beans is great - tender but not mushy, intact leaves, toothsome texture. Best of all it is super easy to figure out how to use it. The only thing I'd change is to make it easier to clean the lid. This Pressure cooker delivered wonderful results! I'm able to make my broth in 2 hours (which used to take up to 24 hrs cooking time in an open stock pot and make a huge mess!); the results are broth that "gels" when chilled...which is what you want your bone broth to do! I am now looking to branch out and experiment with other recipes and can't wait! I had used (and loved) a Kuhn Rikon pressure cooker for years; unfortunately food started to stick, and it was hard to monitor high and low pressure on my gas burners. Had always wanted a slow cooker also, so I tried the Breville. It is an AMAZING machine - easy to use (after some initial practice), easy to clean, and food comes out perfect with either method.
