Be the first to Write a Review A sweet, yeast-leavened cake, babka is traditional at many types of holiday celebrations in Eastern Europe. A soft brioche-like dough is filled with homemade candied orange zest, chocolate chunks and ganache made from locally sourced Tcho chocolate, and then folded into individual tulip-shaped baking cups. Before baking, the babkas are topped with a toasted-almond streusel. The babkas are made by The Bread Project in Emeryville, California, a nonprofit that trains people with limited resources in the art of baking, helping them develop expert job skills for working in the food industry.
