The expert bakers at The Bread Project in Emeryville, California, take care not to incorporate air into the dough during the mixing process, resulting in shortbread with a crisp exterior and creamy interior. These unique cookies use all-natural ingredients like Strauss organic butter and are baked to a darker color than traditional blond shortbread for a lightly caramelized flavor. The treats are made by The Bread Project a nonprofit that trains people with limited resources in the art of baking, helping them develop expert job skills for working in the food industry.
