    Finocchiona Salume: A traditional Tuscan-style salume made of heirloom pork laced with white wine, cracked fennel and fennel pollen.

    Salume Toscano: Spicy dried salume made from heirloom pork seasoned with spices, red wine and red pepper flakes.

    Blackberry Jam: Old-fashioned, pectin-free jam featuring fresh-picked blackberries, golden cane sugar and a hint of tangy lemon juice.

Serving Suggestions

  • Make simple buckwheat blini and garnish with smoked trout, crème fraîche and minced chives.
