- Slow Cooker Lasagna Recipe
Feed a crowd with this flavor-packed lasagna, which cooks to bubbling perfection in a slow cooker. If you’re lucky, you’ll have leftovers to enjoy for lunch the next day.
- 1 Tbs. olive oil
- 2 lb. Italian sausage, casings removed
- 2 jars (each 24 oz.) tomato sauce
- 2 cups water
- 1 lb. whole-milk ricotta cheese
- 2 Tbs. chopped fresh flat-leaf parsley
- Kosher salt and freshly ground pepper, to taste
- 18 ruffle-edged lasagna noodles (not no-boil noodles)
- 1 1/2 lb. mozzarella cheese, grated
- 2 oz. Parmigiano-Reggiano cheese, finely grated
- Thinly sliced fresh basil for garnish
In the stovetop-safe insert of slow cooker over medium heat, warm the olive oil. Add the sausage and cook, breaking up any large chunks with a wooden spoon, until the meat is browned, 10 to 12 minutes. Add the tomato sauce and water and bring to a simmer. Transfer the sauce to a large bowl.
In another bowl, stir together the ricotta, parsley, salt and pepper. Set aside.
Spread a thin layer of the sauce on the bottom of the slow-cooker insert. Cover the sauce with a single layer of uncooked lasagna noodles (about 3), breaking the noodles as needed to fit. Spread about 1/3 cup of the ricotta mixture over the noodles. Top with about 2 cups of the sauce, then sprinkle with about 1 cup of the mozzarella and 1/4 cup of the Parmigiano-Reggiano. Repeat the layering 4 more times, starting with the noodles.
Transfer the insert to the slow-cooker base, cover and cook on low according to the manufacturer’s instructions until the noodles are tender and cooked through, about 4 hours.
Position a rack in the center of an oven and preheat to broil.
Transfer the slow-cooker insert to the oven and broil until the cheese is bubbly and golden brown, 6 to 8 minutes. Let the lasagna rest for 20 minutes before serving. Garnish with basil and serve immediately. Serves 12.

- Chicken Taco Salad
To prepare the chicken, in a large fry pan over medium heat, warm the oil until almost smoking. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the chicken, cumin, chili powder, cayenne, tomatoes, cilantro and oregano and stir to combine. Season with salt. Stir in the stock and cook until most of the liquid has been absorbed and the tomatoes are soft, 5 to 10 minutes. Taste and adjust the seasonings with salt. Set aside.
Line a baking sheet with paper towels. In a 4-quart saucepan over medium heat, pour in oil to a depth of 3 inches and heat to 360°F on a deep-frying thermometer. Using a tortilla basket according to the manufacturer's instructions, fry the tortillas 1 at a time until golden brown, 2 to 3 minutes. Transfer to the prepared baking sheet.
Place each fried tortilla on an individual plate. Top with lettuce, beans, chicken, cheese, tomatoes, cilantro, avocado and salsa, dividing equally. Pass additional salsa alongside. Serves 6.

I am now having the same issue that I had with my first cooker. The low setting goes out so you either have warm or high. The reason I loved this cooker was because unlike cheaper ones, the low setting actually does run on a lower heat. I have a half doezen crock pots and the low setting is usually very hot. I loved this product for actually cooking at a lower heat. However, both cookers had the same issue of the lower heat going out after about one year, i will not buy this again. I called All Clad to ask about recoating it. Impossible, I was told. I asked if All Clad would replace it. "NO". I asked if I could buy a replacement. "NO. We have none that will fit." So here I am: no slow cooker thanks to All Clad, 81 years old living in a retirement community and my husband dying in the nursing home. My expenses exceed my income so needless to say I cannot purchase a new one.
