- Slow Cooker Lasagna Recipe
Feed a crowd with this flavor-packed lasagna, which cooks to bubbling perfection in a slow cooker. If you’re lucky, you’ll have leftovers to enjoy for lunch the next day.
- 1 Tbs. olive oil
- 2 lb. Italian sausage, casings removed
- 2 jars (each 24 oz.) tomato sauce
- 2 cups water
- 1 lb. whole-milk ricotta cheese&
- 2 Tbs. chopped fresh flat-leaf parsley
- Kosher salt and freshly ground pepper, to taste
- 18 ruffle-edged lasagna noodles (not no-boil noodles)
- 1 1/2 lb. mozzarella cheese, grated
- 2 oz. Parmigiano-Reggiano cheese, finely grated
- Thinly sliced fresh basil for garnish
In the stovetop-safe insert of slow cooker over medium heat, warm the olive oil. Add the sausage and cook, breaking up any large chunks with a wooden spoon, until the meat is browned, 10 to 12 minutes. Add the tomato sauce and water and bring to a simmer. Transfer the sauce to a large bowl.
In another bowl, stir together the ricotta, parsley, salt and pepper. Set aside.
Spread a thin layer of the sauce on the bottom of the slow-cooker insert. Cover the sauce with a single layer of uncooked lasagna noodles (about 3), breaking the noodles as needed to fit. Spread about 1/3 cup of the ricotta mixture over the noodles. Top with about 2 cups of the sauce, then sprinkle with about 1 cup of the mozzarella and 1/4 cup of the Parmigiano-Reggiano. Repeat the layering 4 more times, starting with the noodles.
Transfer the insert to the slow-cooker base, cover and cook on low according to the manufacturer’s instructions until the noodles are tender and cooked through, about 4 hours.
Position a rack in the center of an oven and preheat to broil.
Transfer the slow-cooker insert to the oven and broil until the cheese is bubbly and golden brown, 6 to 8 minutes. Let the lasagna rest for 20 minutes before serving. Garnish with basil and serve immediately. Serves 12.

AND... an error code appeared followed by upside down "L"s. All Clad's response was sorry that you are experiencing problems but your product's warranty had expired. Here's a list of service centers. My suggestion to anyone who is considering buying this is... Find your nearest grandma. Give her a big kiss and tell her that you love her. Tell her that you will give her $250 for the slow cooker that she bought when your mom/dad was a kid. Tell you love her again and walk out with the biggest smile ever. I loved my original slow cooker so much got my sister and sister i law one too. But after maybe 3 years and after only about 20 uses, it stopped working. The non stick coating was coming off and the unit would shut off. Very disappointing to come home form work expecting dinner to be ready and the unit was cold! Thought I had forgotten to to set it or the plug had pulled out. The second time this happened I knew it was the unit. After reading through other reviews of others I realized this was a problem with models after the 2 year warranty was up! I called Williams-Sonoma and they gave me All-clad number. I didn't have the sales receipt anymore. I sent an email to All-clad with pictures. They wrote back saying a new insert was being sent and a shipping label to send them the unit so they could evaluate the problem to let me know if it could be fixed. I thought it was strange that they'd send me a new insert when I couldn't use it with a broken unit. This was all before Thanksgiving 2016. I received the insert @ 10 days later, but no shipping label. I wrote back to All-Clad twice before Christmas, but never heard back. Finally in mid January I got an apology email from All-clad and they said because of the inconvenience they were sending me a totally new unit. 10 days later it arrived! So now I have a new unit and an extra insert. I really love this slow cooker and hope this last longer than the first! I start my meals on the stovetop, place the insert into the slow cooker and let it cook! It makes wonderful meals and is easy to clean. Now, with all of this being said, I did have to replace this once because the electric panel went out (funny symbols and numbers showed up on the screen). All Clad and WS were outstanding to work with and replaced my cooker without hassle. This is why I bumped the rating back up to 5 stars. Now, I have an expensive cooker that shuts off when it wants leaving me with cold rotten meat if I'm gone all day and not there to monitor it. Very disappointing, too bad they aren't paying for better electronics from China. I held my breath while watching to see if the coating bubbled like some had complained about, but it cooked perfectly. Dinner was a hit that night. I've used it a few more times and still no complaints! I'm glad I'm "stuck" with this product. Now, some people have said that the heating element of theirs went out after a year or two, but since I haven't owned my that long, I'm not sure about that part yet.
