Each pie dish is shaped from Burgundian clay, which absorbs, distributes and retains heat evenly, so pies bake and brown to perfection. Emile Henry has been crafting artful kitchen ceramics since 1850, when the French company was founded in a small town in Burgundy. Today, it’s still proudly owned and operated by members of the Henry family. The mineral-rich soils of Burgundy are known for creating wines with unique terroir, but they also yield the special local clays used to craft each piece of Emile Henry cookware and bakeware. The high-fired clay withstands extremely high temperatures while distributing and retaining heat gently and evenly. Artisans hand apply the glazes to create vivid color that looks beautiful in the kitchen and at the table.

Even without greasing the dish prior, pie pieces always come out clean without sticking because of the perfect glazed surface. Received the burgundy dish on 11/22 and used it that day to make a pumpkin pie for Thanksgiving. All I can say is WOW!! Hands down, my best pie ever - and all I changed was the pie dish. I can bake up to a dozen a day, so I've used nearly every type and brand available. That famous, very inexpensive glass brand is excellent. But this one is even better than that - it's perfect. It also saves some time. Since the ruffled outside edges of your crust are essentially automatic, you can concentrate on cut-outs, leaves, lattices, and other decorative effects. I love it, and will remain a repeat purchaser until I own six of them. I recommend the smaller Emile Henry pie dish, too.Date published: 2016-10-17
