The exceptionally tender and flavorful meat is produced by Niman Ranch, whose hogs are bred for old-fashioned flavor. The hogs are humanely raised by family farmers in the outdoors and are fed an all-natural vegetarian diet free of hormones and antibiotics. For easy handling and slicing, the rib bones are frenched, or stripped, and then the rack is tied in a circle. The 12-rib crown roast (5.5 lb.) serves 12. The 24-rib crown roast (11 lb.) serves 24.
