In Tuscany, flattened pollo alla diavola is cooked under a weighty terra-cotta brick, or mattone, producing an extra-crispy chicken. Our base is glazed inside to help keep juices in, while the heavy press holds down the meat for even cooking. Use on a grill, gas burner or electric burner with a diffuser, or in the oven. Recipes are included. We recommend washing by hand. 12" diam.
