This cast-iron oven takes its name from the combination of the French doux and feu to describe its “gentle fire.” Pronounced doo-FUH, it’s designed to provide the constant self-basting that yields a juicy roast thoroughly infused with flavor. The key element of its design is the tight-fitting lid. When cooking begins, fill its recess with ice cubes. As vapor forms inside the pot and comes in contact with the cool lid, it condenses into water. In the typical Dutch oven, this water rolls back into the pot via its side walls. Because the inner surface of the doufeu lid is dotted with nibs, the water drips into the center of the pot, continuously basting roasts, short ribs and braises so they emerge tender and succulent. The doufeu performs best when foods are slowly cooked at a low temperature and with minimal added liquid. Without ice, it works equally well as a Dutch oven for everyday roasting, simmering and serving. Matching integral handles on the pan and lid assist lifting the heavy filled pan. The thick cast iron has an easy-care finish of colorful porcelain enamel inside and out. Dishwasher safe. 7 1/4-qt. cap., 13" x 9 3/4" x 5 1/2" high. Made in France.
General Information
- Dishwasher safe.
- Never use abrasive cleaning products or scouring pads.
- Remove stubborn food residue with a plastic or sponge scourer only.
- Use wood, plastic or heat-resistant nylon tools to avoid scratching the enamel.
- Handles will get hot - use pot holders. At the table, use with a trivet.
- For best results, use low to medium heat on stovetop. Oven and broiler safe; however, the black phenolic handles are only safe to 450ºF.
- Do not slide pans on the stovetop. Enameled surface can chip or crack if dropped or banged against a hard surface.
