Recipe: Slashed Chicken with Herb Butter
Before roasting the chicken, use a sharp knife to cut slashes in the legs and breasts. Herb butter, along with garlic slices and bay leaves, are pushed into the slashes so the flavors penetrate the meat.

For roasting and braising, it's hard to beat this oven from Le Creuset. With its oval shape, the pot can accommodate roasts as well as a small chicken. General Information
- Dishwasher safe.
- Never use abrasive cleaning products or scouring pads.
- Remove stubborn food residue with a plastic or sponge scourer only.
- Use wood, plastic or heat-resistant nylon tools to avoid scratching the enamel.
- Handles will get hot - use pot holders. At the table, use with a trivet.
- For best results, use low to medium heat on stovetop. Oven and broiler safe; however, the black phenolic handles are only safe to 450ºF.
- Do not slide pans on the stovetop. Enameled surface can chip or crack if dropped or banged against a hard surface.
