Recipe: Eggplant & Tomato Stacks
To create this summery side dish, thinly sliced eggplant and zucchini are layered with tomato slices and cooked onions. Then the stacks are baked in the oven and topped with grated Parmigiano-Reggiano cheese.

Use this heavyweight fry pan for low-fat cooking that preserves the full flavor of foods. Made in France of enameled cast iron, the pan gets very hot for superb searing and requires very little oil. - Dishwasher safe.
- Never use abrasive cleaning products or scouring pads.
- Remove stubborn food residue with a plastic or sponge scourer only.
- Use wood, plastic or heat-resistant nylon tools to avoid scratching the enamel.
- Handles will get hot - use pot holders. At the table, use with a trivet.
- For best results, use low to medium heat on stovetop. Oven and broiler safe; however, the black phenolic handles are only safe to 450ºF.
- Do not slide pans on the stovetop. Enameled surface can chip or crack if dropped or banged against a hard surface.
