The Perfect Shot

Thick, dark and intensely flavorful, espresso is the quintessential Italian coffee. In corner caffès and espresso bars from Milano to Napoli, experienced baristas make espressos that are just the right height, strong but never bitter flavor, with a thin layer of crèma on top.

The dense, robust brew is made by forcing hot water through finely ground, compressed coffee. The addition of frothed or steamed milk creates myriad variations: cappuccinos crowned by a foamy layer of steamed milk; lattes infused with hot steamed milk; and caffè mochas rich with chocolate.

While the Italians still brew espresso on their home stovetops, innovative electric espresso makers have brought barista-quality espresso to home kitchens. From grinding fresh beans, “pulling the shot” and frothing the milk for espresso drinks, you now have the ways and means to make a rich, aromatic cup.

Tip: Frothing Milk for Espresso Drinks

To produce the densest foam, use skim milk only. Be sure the milk and pitcher are both chilled. Store the empty pitcher in your freezer, so it’s always ready.
